Peranan Penyimpanan Dalam Menunjang Ketahanan Pangan

Abstract

Ketahanan pangan didefinisikan sebagai keadaan pada saat semua orang pada setiap saat secara fisik sosial, dan ekonomi memiliki akses terhadap pangan yang cukup, aman, dan bergizi untuk dapat memenuhi kebutuhan pangan yang sesuai dengan seleranya bagi kehidupan yang aktif dan sehat. Arah kebijakan ketahanan pangan Indonesia saat ini masih cenderung difokuskan pada tahap budidaya (on farm), sementara
perhatian pada tahap pasca panen masih belum memadai. Padahal, selama tahap pasca panen dapat terjadi kerusakan, kehilangan, dan penurunan mutu dan nilai gizi, serta keamanan pangan, yang dapat membuat pangan yang ada tidak memenuhi kriteria pemenuhan ketahanan pangan. Penyimpanan merupakan salah satu tahap pasca panen yang berpotensi memberi andil pada terjadinya kehilangan dan kerusakan bahan pangan yang telah diproduksi. Pada tahap penyimpanan dapat diterapkan teknik-teknik penyimpanan yang benar dan pengendalian hama yang tepat sehingga selama masa penyimpanan kerusakan ditekan sekecil mungkin.

Food security is defined as a situation in which all people physically, socially, and economically at all times have access to sufficient, safe and nutritious food to meet their needs in accordance with their taste for an active and healthy life. It seems that the current policy of Indonesian food security is heavily focused on the food production phase (on farm), whereas insufficient attention is given on post harvest stage. In fact, during post-harvest stage food loss, quality deteriorations, and loss of nutritional value, as well as loss of food safety may take place, which can make food that does not fulfill the criteria of food security compliance. Storage is one of post-harvest stages that could potentially contribute to the occurrence of above quantitative and qualitative food losses. During storage different proper storage techniques and pest control could be applied, so that the food losses during storage could be reduced to as small as possible.
